Berry Nutty Quinoa
Quinoa (pronounced KEEN-wah) is actually a seed that can be eaten as a delicious breakfast dish combined with blueberries and strawberries. Feel free to use any other berries or fruit that you have on hand or enjoy.

Ingredients
- 1 cup unsweetened almond milk
- 1 cup water
- 1 cup quinoa rinsed in a fine-mesh colander
- 1 tbsp butter or coconut oil
- 4 drops liquid stevia optional
- 1 cup organic blueberries
- 1/2 cup organic strawberries sliced
- 1/4 cup raw walnuts chopped
Instructions
- In a medium saucepan over high heat, combine almond milk, water, and quinoa.
- Bring to a boil. Reduce heat to medium-low. Simmer until most of the liquid is absorbed, about 15 minutes.
- Add butter or coconut oil and stevia if desired and stir well.
- Cover, remove from heat and let stand for 5 minutes.
- Stir in blueberries and strawberries.
- Top with walnuts and serve warm.
