Berry Nutty Quinoa

Quinoa (pronounced KEEN-wah) is actually a seed that can be eaten as a delicious breakfast dish combined with blueberries and strawberries.  Feel free to use any other berries or fruit that you have on hand or enjoy.

Ingredients

  • 1 cup unsweetened almond milk
  • 1 cup water
  • 1 cup quinoa rinsed in a fine-mesh colander
  • 1 tbsp butter or coconut oil
  • 4 drops liquid stevia optional
  • 1 cup organic blueberries
  • 1/2 cup organic strawberries sliced
  • 1/4 cup raw walnuts chopped

Instructions

  • In a medium saucepan over high heat, combine almond milk, water, and quinoa.
  • Bring to a boil. Reduce heat to medium-low. Simmer until most of the liquid is absorbed, about 15 minutes.
  • Add butter or coconut oil and stevia if desired and stir well.
  • Cover, remove from heat and let stand for 5 minutes.
  • Stir in blueberries and strawberries. 
  • Top with walnuts and serve warm.
